I m ade room in the freezer for some more Wagyu and thought “might as well thaw some ground nilgai for burgers tonight”. Was a good thought. Saturday will be a meat smoking day.

I had to look up with nilgai was; funny that it ended up in Texas of all places.
Is it an easy to find meat in the southern US?

Never actually eaten nilgai. Would you say it’s closer to beef or to elk?

They were imported for hunting on the King Ranch. I went to an executive retreat at a hunting lodge on the King Ranch and the chef fed us nilgai fajitas. They were excellent and reminded me of elk.
*I am not an executive and just went with the group to fix the network. I was not allowed to mingle with the oil executives.

Yup like mentioned below the largest herd outside of Asia resides on the King Ranch in South Texas. It is $2100 to hunt one off of the king ranch but if you know someone sometimes they need to cull a few and it’s cheaper. They are large animals and produce a lot of meat. I can’t count how many times I’ve been given the meat to make room in a friends freezer. Long way to say it isn’t readily available at a store but you hang around long enough someone is bound to ask if you want some.

King Ranch? Like the truck? I guess that would make sense.
I wonder what an oil executive party looks like. Did you get to hunt anything, even if you weren’t able to mingle with execs?

Don’t know if true or not but the story goes that a local zoo had illegally imported them from India and was being prosecuted to pay for the removal/return of the animal. The King Ranch made a deal with the right people to purchase the small herd and release them in south Texas. Now it has over 1500 Nilgai in the herd, the largest outside of Asia.

No hunting for me did some salt water fishing off the pier and caught a few reds. They did use full on safari jeeps to take the clients out, chair out front and all.

I think you hit the nail on the head, the ground meat is very similar to buffalo. I will say the backstrap and other cuts of meat are closer to that of venison in flavor/texture but still very mild as far as gamey taste goes.
